Fudgy, chocolatey, and packed with 25g of protein, these brownie bars are the ultimate healthy indulgence. With their rich, melt-in-your-mouth texture and deep cocoa flavor, they satisfy your sweet tooth while fueling your body with essential nutrients. Each bar delivers a balanced macro profile—high in protein to support muscle recovery, moderate in healthy fats, and just the right amount of carbs for sustained energy. Perfect as a post-workout treat or a midday snack, they’re also ideal for meal prep, allowing you to enjoy a delicious, nutritious dessert anytime. These bars are naturally gluten-free when made with gluten-free oats or protein powders, and vegan options can be easily achieved by using plant-based protein and dairy-free chocolate. For best results, don't overbake; remove the bars once a toothpick inserted in the center comes out with moist crumbs to keep that perfect fudgy texture. Store them in an airtight container to maintain their moist, decadent consistency, making them a versatile and satisfying addition to your fitness-focused diet. INSTRUCTIONS
Preheat your oven to 175°C (350°F) and line an 8x8 inch pan with parchment paper.
In a food processor, blend the black beans, protein powder, cocoa powder, erythritol, eggs, and applesauce until smooth.
Add the baking powder and pulse a few times to combine.
Pour the batter into a bowl and stir in the sugar-free chocolate chips.
Pour the batter into the prepared pan and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the brownie cool completely before cutting into 12 bars.
TROUBLESHOOTING
My bars are too dry
Try adding 1-2 tablespoons more liquid (milk, yogurt, or egg whites). Also ensure you're not over-measuring the protein powder - use the scoop and level method.
They didn't rise properly
Check your baking powder is fresh (test by adding to hot water - it should bubble vigorously). Also, don't overmix the batter as this can deflate the air bubbles.
The texture is rubbery
This usually means too much protein powder or overbaking. Reduce baking time by 2-3 minutes and check doneness with a toothpick.
